Park Distillery has an excellent atmosphere, great food too.

Banff Brewing Company is decent, especially if you can get a seat on the balcony overlooking Banff Ave.

If you can get to the Fairmont or are staying there, there are several awesome spots:
Grapes :(charcuterie/cheese place doing tremendous things: elk salami, duck pastrami, etc)
1888 Chop House: upscale steak/chop spot
Waldhaus Pub & Patio: overlooks the Fairmont golf course (ETA: I see you're a German beer fan, so this place may be right up your alley, good schnitzel too)

There's also a huge outdoor deck restaurant that has incredible views

I will add coyotes southwestern grill (breakfast) and block kitchen and bar (dinner). I enjoyed both thoroughly.

Went to Banff last month. First off it's beautiful. Enjoy.

We snowboarded mostly so didn't go into Banff every day. But we went to the grizzly house in downtown Banff. They bring out a 600 degre stone and you cook a bunch of exotic meats on it. It was pricey but really really good. Cool atmosphere. Apparently need to book in advance so if you look at thing you'd like it call them.

We went to a steakhouse there too. Can't come up with the name. I will find it and edit this post. It was good. Not something I'd say you have to go to.

Go ahead and hit up Cows ice cream for me. Think we went there everyday but it gets really busy so try in between lunch and dinner

Tooloulou's is great for breakfest, it's a cajun restaurant, didn't eat anything else there because it wouldn't be fair to them. Block Kitchen is great, Saltlik has the best wing & fried ribs, best burger Eddie's burger bar has the best burgers please make res...You can't go wrong with any of restaurants there.Banff is a Beautiful place, spent 10 days there over the holidays. Take a helicopter ride out of Canmore its breath taking.

Where? I plan on skiing three days at Sunshine, but have the option to ski Lake Louise and Norquay as well.
