Here’s the catch: the girlfriend is only 20 so most if not all nightlife is out of the window (this threw out Nashville).
Can you suggest a place within driving distance from BR (preferably not Texas) that’s relatively inexpensive and has some good stuff to do for 2 or 3 days. Thanks!

I know you said no TX, but why not Houston? You can find lodging at any pricing point, and IIRC, the St Arnold Brewery beer hall is open to minors (I certainly saw lots of kids when I went). You could do the museum district—all of that lovely air conditioning, plus dinosaurs, mummies, art, etc. So you can tour the brewery & drink & still hang out w/her.
Play food tourist and only eat at ethnic restaurants serving cuisine you’ve never tried: Burmese, Polish, Szechuan, Pakistani, Ethiopian.....or track down HTown food trucks. Hit up the Rice farmer’s market (or any other outdoor market for good stuff).
Catch a soccer or baseball game...
Or how about Chattanooga....

St. Louis is a 9 hour drive. Hotels and good restaurants are pretty cheap. It has a free zoo and science museum. The city museum is a 10 story playground for big kids and adults. The Arch is cool and you can catch a Cardinals game. There is a six flags. They also have big hills and hiking trails just outside of town.

Summer
Getaway
College kids
Keep it simple, beach or mountains/lakes. If you want to drink then pick a place that allows you to pack a cooler.
Most mountains (GA/TN/NC and AR/MO) are 8+ hours drive, f that noise for 2-3 days.
Find a nice spot along the gulf coast that is affordable for you, and just enjoy a few days of sand, salt water, seafood, and 20 year old sex.
I would trade a week in Europe for that.
If you are tired of the beach and sex, then I am not sure what to recommend. Maybe a summer concert/road trip. White water rafting in GA/NC mountains. A cabin at a lake in AR/MO/TN. Weekend backpacking trip along the Pinhoti or Ouachita trails.
If she is low maintenance and y'all like the outdoors go browse this site https://www.hipcamp.com/ for a bit and see if anything jumps out at you. It is like an airbnb for camp sites, national forests, farms, cabins, yurts, and off the beaten path places to stay for cheap as frick.

If flexible you might find a street-type music festival (keeping with inexpensive); perhaps in a place like Beale Street (not Texas). It would circumvent having no ID and allow the same type feel as having one
Maybe throw in a stop along the way or back.
Or maybe a place like Hot Springs and it shouldn't break the bank and be a little different.
Or do both if you want a road trip.
