One night only. Breweries, dive bars, chill places to get a bite with some local flavor?

Breweries:

The Veil
The Answer
Triple Crossing
Final Gravity

Food:

Millie's is a dive-y cafe that has good food. The only other place we ate was a little fancier

ETA: Forgot about the answer for food. Nice Vietnamese selection

Are you limited to specific areas of the city?

Scott's Addition has more than 6 breweries, a couple of cideries, and a good meadery. The Veil, Ardent, Bingo, Vasen, and a couple others are all within walking distance of each other. There's also a an arcade with pour your own taps and a really good BBQ place called ZZQ. Lunch/Supper is also a really good place for food and drinks.

The Fan is where you will find local bars. Lots of dive-type places with either good taps or good prices. I like Commercial Tap House for a mix of both, but Bamboo Lounge and Cary Street Cafe are also popular.

If you have a chance, go to Proper Pie in Church Hill. Ron's assessment of the Vietnamese food is spot on. Mekong/The Answer has good Vietnamese food and a was a semifinalist for the James Beard award for their tap list.

If you need any other suggestions or have questions, let me know and I'll try to help you out.

Also eat next door to The Answer at An's restaurant, Mekong. Amazing Vietnamese food. They also serve some of the food in The Answer.
