Thinking of spending 6 days in that area first week of November. What kind of itenerary would be the most bang for my buck time and scenerary wise.
I’m thinking first two days in Vegas then 3 days in Utah. Maybe Zion, capital, Bryce and then back to Vegas for one more night.
Other ideas is to drive to salt lake instead of back to Vegas or take away a day in Utah and do the Grand Canyon instead

you need 2 days in Zion
Bryce you can see in a day
the drive on hwy 12 is incredible (Dixie NF)
don’t skip capital reef
I would just wave at Vegas on the way thru but that’s just me

If you want outdoors, I'd de-prioritize Vegas and loop the Grand Canyon and Southern Utah. Bryce and Zion are musts.
If you're ambitious, you could do a day in Sedona, a day at Grand Canyon, then hit Bryce and Zion. I'd recommend a little detour into Valley of Fire on the way from Vegas to Utah.
Sedona, GC, Bryce and Zion are the biggest highlights of North AZ and Southern Utah. Having lived in Vegas, those are the nicest outdoorsy things in driving distance.

I would do two days in Zion and one in Bryce. If you fall in love you can come back and do the other parks and natural attractions on an extended trip.
Save the Grand Canyon for when you can do the North Rim, which I think is closed to regular visitors in November/winter, but I could be wrong about that.
Also, you probably want to book accomadations ASAP. Zion and surrounding areas have literally seen visitors double in recent years. I think Zion is expected to get over 5 million visitors this year.
