I rented a car for Saint Tropez through Epernay.

I know it's a haul but I think it will be interesting to see the French countryside first hand while driving.

I was originally planning on breaking up the drive from ST to Epernay with 2 nights in Lyon (was also considering Avignon and Aix-en-Provence) but I think I may have been convinced to keep going and stay 2 nights in Beaune or Dijon

Alternatively, I am considering extending other portions instead, but the problem is that I think Nice is probably the area I'd want more time and the first half of the trip is already locked in. 4 nights should be more than enough for Saint Tropez, and I don't think I'll need more than 2 in Epernay.

My options would be:

A) spend 2 nights in a new location (e.g. Beaune)

Or B) extended Paris and/or Epernay by some combination of 2 nights

Option B would include a full drive of 9.5 hr from ST to Epernay (rental car already reserved), and I feel confident that I would rather see a new place than spend more time in Epernay or Paris which is why I'm leaning to Option A.

We recently did 2 nights in Barcelona, 3 nights in Ischia (Island outside of Naples), and 2 nights in Athens. This was followed ollowed by a week on a catamaran in Greece (Poros, Hydra, and Ermione were the stops). After that trip, I was not very conflicted in wishing I had more time to spend in Ischia. I would have enjoyed more time in Barcelona or Athens, but not at the expense of time in Ischia. I definitely plan to go back to Ischia and spend at least a full week sometime in the near future.

Thanks to everyone for the input. I ended up pulling the trigger and booking a 2 night stay in Beaune at Hotel Le Cep.

If there's any must-do's while there or any of the other locations, I'd love to hear them.

It’s been said several times in this thread, but don’t be surprised if y’all (particularly her) are exhausted after the wedding. Huge stresser for a lot of people.

Thanks baw.

I think we'll be okay on recovering after the wedding though. We'll have about a 7 week gap between the wedding and honeymoon. Wanted to book the wedding in early May before it gets too hot in Austin, TX (although we booked the date, and then t - 1y this year was 101F on the heat index ) but book the honeymoon late enough that we'd have good beach weather on the Cote d'Azur

I haven’t been to this restaurant in Beaune, but it’s on my list and comes highly recommended by someone I trust with choosing restaurants. And others who have gone have raved about it. Le Bistro D’el Hotel.

Some suggestions:

Paris. Our favorite experiences have been in no particular order:

L'ami Jean (though it's been a while since we've been)
Le Cinq
L'Orangerie
Septime
Ledoyen
Kei

The Louvre is worth it. Even if you're not that into art (we're not), the building on its own is awesome. We also enjoyed the Palais Garnier a walk down the block from the Park Hyatt. Plenty of neighborhoods to explore, cafes, etc.

Champagne region. Billecart does a very nice tour that they limit to small groups. They were very generous with their time and wine they poured. Vilmart was nice as well and on the smaller side.

I'd recommend lunch at L'assiette Champenois. Was very good. I'd suggest considering lunch at high end restaurants and a light dinner if thinking about doing something along those lines. Lunch is usually a great value and you don't go straight to bed after gorging yourself with food. That said, we do dinners at these types of restaurants too.

Burgundy. Getting into some of the high demand wineries can be difficult. Of the bigger places, we had good experiences at Bouchard Pere et Fils (not Aine) and Jadot.

Dining - La Lune is good and right by Hotel le Cep. It's also a nice change of pace given its Japanese background and influence. Maison Lameloise is excellent. Other places to consider: Le Charlemagne, Caves Madeleine, Le Millésime, and La Ferme de la Ruchotte.

If you have time on the way to Burgundy, look at stopping for a tasting at Chapoutier in Tain (can walk up Hermitage hill if feeling energetic), or Yves Cuilleron/anywhere in Ampuis.

Don't have experience in St. Tropez, but enjoyed Nice. You can kill a day just walking around and drinking wine on the beach. Are you staying at the Hyatt in Nice as well?

Dining in Nice - Jan is excellent and punches above its rating and price. Highly recommended. Mirazur is a reasonable drive away and is one of the best restaurants in the world. We thoroughly enjoyed the food there.

Overnight in Beaune (it’s worth seeing), and add an extra night in Paris.

I prefer Musee d’Orsay (5th floor for sure).

But I usually do both.

Beaune is very centrally located amidst some awesome small villages. Definitely look into renting some bikes, going to their market (look up dates/times), buying some cheese, bread, smoked duck (or sausages) and riding to outlying villages (Pommard or Volnay) and have a picnic with some bottles. Travel wine glasses should be packed anyway and used here. Bring a wine opener also.

Food there was excellent. Order some oeufs en meurette (eggs in a beef bourguignon-like sauce) if you see it. The area is also escargot central. Now that chowhound is dead do some looking on reddit and cross reference with TA/Yelp/fourchette (french restaurant rating website...use google translate). Really no reason to not have outstanding meals in the area.
