Have $200 in Southwest Credits to Use by July- Where to?

After a bunch of cancelled flights last year, I'm sitting on a little over $200 in flight credits on Southwest. One expires July 18, the other July 25th. Where would you go to for a quick weekend trip in May, June, or early July?

Must leave from Seattle so destination wise I'm looking from TX to the west coast. Don't mind taking a connecting flight or spending a little more than the credits I have to make the trip worth it. Exploring a smaller not as well known city that southwest flies to could be fun.

Initial cities list-
Phoenix, Albuquerque, San Diego, Denver, Las Vegas, Palm Springs, El Paso, Salt Lake City

50th anniversary sale

I’d pick for the best deal to an area with less Covid restrictions.

I think SW just opened service to Bozeman so Yellowstone could be a nice trip

Living outside of Seattle, I'm used to these stupid covid rules at this point and looking for normalcy. I'm leaning towards Phoenix, Salt Lake, or Vegas and avoiding Cali but Cali is a very easy getaway from here with tons of flights hence why it's not off the table yet. Yellowstone is a great suggestion, little worried about rental car prices though if I went that way.

Phoenix has decent flight times, maybe fly there and head to Scottsdale or Tempe? Going to be extremely hot in June or July but can make the best of it

Booked a flight for June when SW added the Bozeman route. Can’t find any rental cars available last I checked, when I looked a month ago it was 200+ a day was the best rate for the smallest car you can get. Probably gonna end up cancelling that trip.

I probably should have done San Diego (it's next on my list of cities to visit now that I live on the west coast) but went with Phoenix. I know it'll be hot, but I've only been there once before, got great flight times going and coming home, and it's halfway between me and a friend in Dallas who will meet me there. Found an ATV + shooting in the desert outfitter that looks pretty awesome LINK

Dang. We booked week of July 4th and no issue with rental. Now I’m starting to worry if they really going to honor the reservation.
