Because I know absolutely nothing about Cuba, how difficult is it to travel there for pleasure?

If you plan ahead it’s really not bad. But it’s not a place where you show up and wing it.

Well, as a US citizen you aren’t allowed to travel there for pleasure.
That said, you’ll need a detailed itinerary for your trip to satisfy US government requirements. You can do it your self and there are services that I’ll prepare an itinerary for you.

Easy. No bullshite agenda required.
Visit some Churches, take a bunch of photos with your cell, purchase something from the gift shop and your visit was for religious reasons.
EVERY one of these tours to Cuba group travel thing is a racket and completely unnecessary to visit and travel there.

You get the visa at the airport. No big deal and it's cheap.

No one here has suggested a tour. What has been suggested is that if someone wants to get their passport stamped in Cuba and they traveling with a US passport it would be prudent to have an itinerary so the requirements of the US government for travel to Cuba are met.
We had an itinerary. We loosely followed it but we have the proper documentation of the trip just in case.

Reommendations.
If someone comes up to you and offers help they'll help but they expect something in return. If you ask someone for help, they'll help. They also appreciate a little currency but they don't expect it.
Don't use government cabs (regular taxis). In Hanava you can use a bicycle taxi to get around. Negotiate the fee up front. The 50's cars aren't that expensive if you want to tool around in one.
If you're staying in Havana then stay IN Old Havana. If you stay in a close by area you'll wrack up a ton in taxi costs.
Since you have a Spanish passport I presume that you have a European credit card which will work. American bank issued credit and debit cards will not work. Cash only for Americans.
If you want a beach day a day trip from Havana to Varadero Beach is fun. It's not a long drive and it's a very pretty beach.
Hemingway's museum was nice as was the Cuban cooking and mojito making class we took.
There's live music everywhere in Havana. Enjoy the trip. We can't wait to go back.

Sorry for the sidebar, but here's my Cuba story:
My wife was born in Cuba and she and her family moved here when she was 10 years old. She has only recently expressed interest in going back, and I would love to see it with her to learn of her history/culture and see the scenery. She has family in several towns around the island, and has a cousin who lives in Havana with her husband who lives very well by Cuban standards. I was looking into restrictions this weekend, and as an American citizen I would only need the tourist visa which can be purchased online or at the airport. But being that my wife was born in Cuba, they do not recognize her status as a US citizen. She would have to apply for and receive a Cuban passport, which can be done. But we decided it wasn't worth the risk for her to do that and then not be able to exit the country, or worse.
It's sad that she finally had struggled with the emotions and wanted to return, only to find out that it is a risky proposition.

Sorry to read that. My wife is half Cuban and she's always wanted to go. She was born in the US so we didn't have the worries that you do about going.

you are making it more difficult than it is.
here is some info:
BTW DO NOT LISTEN to some of the know it alls that make it sound soooo easy.
It is not hard, but there is planning involved to cover your backside.
The US govt has up to 5 years to ask what you did.
