Been to Anguilla and St. Kitts and Nevis. Both are excellent recommendations. However, if you want to do hiking St. Kitts and Nevis is by far the better choice. There are some outstanding trails around the volcano. There are tons of things to do outside of the beach on St. Kitts and Nevis.

We stayed at Haminasi in 2008. It was really nice and we would defiantly go back. If you go there, skip the Honeymoon suite and just do a treehouse.
We are divers and the good dives are a long boat ride from Haminasi. We stayed at Turneffe Island Resort in 2013 and loved it. It is on par with Haminasi, but with quick access to great diving. It all depends on what you are looking for.
I've heard that Anse Chasnet (Jade Mountain) in St. Lucia is nice. And I've heard Spice Island in Grenada is good, but extremely pricey at $1000 a night. For $1000 a night you might as well just go to Bora Bora and stay at the Ritz Carlton.
If you don't dive and want to do Belize, I highly recommend Hamanisi. If you go there, ask them to do a dinner for you on the porch of your treehouse.

My friend will be staying at Hamanasi for his honeymoon in May. If I do go to Belize, I'd like to do 4 nights on the beach and 4 in the jungle mountains.

I was looking at Anse Chasnet, but I don't think they have AC. Or there was something else that turned me off.
Spice island looked great and it was only $500 per day all inclusive , but after reading reviews, the majority of the guests are 50+, so it's an older crowd.

There is great hiking on St. Kitts.
Full Day VolCano Hike
There is a Marriott resort on the island. I hear that it's very nice. We rented a villa on the south side of the island overlooking neighboring Nevis.
The beaches on St. Kitts aren't fantastic but the beach bars make up for it. The Kittitians are friendly people and are very proud of the island. It's one of the cleanest islands I've seen in the Caribbean. If you decide on St. Kitts & Nevis I'll post some pics and give you restaurant recommendations.

i did my honeymoon at little dix bay on virgin gorda. it was heaven. i'm pretty sure you can get an all-inclusive option.
its closed right now for a complete renovation, but it is opening back up in november. i would recommend it in a heart beat. i've been spoiled by my in-laws and stayed at some incredibly nice hotels, but this place is second to none.
you'll get close to your budget, but it is worth it.
