Cancun Food question

Last month we were there and every excursion has the same buffet style meal. Pork and chicken smothered in some gravy sauce. Any idea what that sauce/gravy is? My youngest ate the hell outta some food there and I wanted to try and duplicate it here.

What did it look like? Probably tomato paste, consume of chicken, and spices.

Was is red? That’s achiote and it’s delicious.

If it’s authentic it’s not tomato paste, it’s a rub made with achiote. Could have been at a resort though so could be something different.

It was red but not red red, more like a gravy. The places we ate at were out in the woods after diving or swimming. The excursions that come with food. And not at the hotel, not spicy at all just smothered pork and chicken but damn good

Has to be achiote and it is delicious. A baked whole fish smothered in achiote and onions in the Yucatan is an amazing dish.
