Yeah, over water bungalow and the Caribbean isn't a thing. It's a hurricane area.

I think there is one near Playa in Mexico, and perhaps one in Belize?

One of the Sandals resorts in Jamaica has over water bungalows, very expensive.

If you want a cheaper option, look in to Bocas town/Bocas del Toro in Panama. Requires a little extra work getting there, but they have over water bungalows for reasonable rates.

Personally, I’d just get past the novelty and book a nice all inclusive or boutique resort in Tulum or something. The bungalows are cool, but for the money you could get a very nice suite somewhere else.
