The xbox is also a windows media center extender but to use it to get live tv you'd need to setup a tuner card on a computer.
I doubt you'll be able to access the coax before it splits anywhere other than where cox has their box on the exterior wall. You might be able to inconspicuously install a small antenna with enough range.

I live near LSU which is within 5 miles of the two main towers I'd be using (WAFB & WBRZ)

ISn't there some kind of antenna they advertise on TV to where you can cut the cable and get perfect HDTV reception for all ota channels?

You may need some kinda of amplifier. It depends on the signal strength in your area. You can hook up a cheap 10db distribution amplifier before the split and probably solve any potential problems.
I would try splitting it without the amp and seeing how it looks before buying the amp.
How many TVs are you splitting to?

3. 2 on the 2nd floor and 1 on the first floor. I'd like to, if possible, utilize the existing coax cables that are run to the tvs currently.

Yeah just try a splitter. You may just want to buy a 4-way splitter and terminate the 4th unused connector.
3 way splitters are unbalanced and one of the "ports" has a larger signal loss than the other two.
Also, if you need an amp, the closer it is to the antenna the better.
