Can someone explain this to me like I still listen to 8tracks?

Simulated surround sound with headphones (or I guess any stereo (2 speaker) setup).
"Spatial" refers to space, and in the context of audio it means the sound seems to come from all around 360 degrees instead of from just two tiny speakers firing directly into your ears.

Thanks for the reply. I wasn’t getting the headphone exclusive part. Does the device have to be compatible to Dolby Atmos?

Idk but spatial audio with the new AirPods are a game changer.

It's not limited to headphones. If you have an Atmos setup you can get surround music on that. I assume you're talking about Apple Music since that's the term Apple uses, so an Apple TV would be one way to feed that to a surround system. I did a trial last year when they announced lossless music was finally available, and tried a few tracks. For headphones though, there is an extra feature that includes a virtual "space" where it can track your head movements and keep the sound oriented as if it's coming from a spot in front of you, as if you were at a concert with a stage. I.e. it gives you both the simulated "surround" effect, but also a "you are there live" effect.

Thanks for the info.
Is this digital surround sound stuff what high definition tv was to standard definition? Will it have the same impacts as HD did 15-20 years ago?

For example, my new truck has 18 speakers. Two in the headliner and two in each head rest.
Listened to some spatial music in it this morning and it has some serious "surround" sound.

Well the obvious comparison in video would be 3D, which didn't catch on enough to make it into the 4K world. (I was a fan and sad that it didn't.) To me, HD video would be compared to the upgrade from mp3/compressed audio to lossless audio.
The question is will it catch on better and stick around more than 3D video did? One big advantage Spatial Audio has is that it works in at least some normal 2 channel headphones/earbuds, without requiring consumers to buy and wear extra stuff (that also has compatibility and comfort issues).
