Questions about AT&T Fiber Internet

Had Fiber installed a few months ago. Everything works good enough but I have 2 questions:
1. We have the name and password set to what we want. 1-2 times per week in the middle of the night it reverts back to a random SSID and password (like a default ATT-dakekajd) type scrambed SSID. Obviously this kicks every device off including thermostat and most importantly alarm + ring doorbells. Anyone know why this is randomly happening or how to prevent?
2. I could use a boost on my back patio TV. What is the (simple) solution to avoid paying the $10/month extender fee? I'm not tech savy - is there a decent extender that's as easy as plugging into an outlet?

You could try a factory reset forcing a firmware reflash on the gateway or just contact att having them send you a new one.
Or just use the default WiFi names and password.

I would hook up a wireless router and not depend on the ATT gateway for wifi.
That would solve your SSID issue. Also I'd turn off the radio on the ATT gateway to minimize interreference.
Second, the wifi of the new router might be significantly better that you don't need an extender.
An alternative for the wireless router is to get a mesh wifi system and kill two birds with one stone. I'm assuming you're not going to run cat6 around the house.

This. Given that you're not a geek, I'd probably just put in a mesh system with maybe two access points, such as this.
Join all of your equipment to the new network, and just ignore at AT&T SSID (network.) I and my in laws have had AT&T fiber for over a decade, and never had the problem you've experienced.
It's almost certainly a hardware issue, because it is not normal for a device to repeatedly factory reset itself. So if you want the ultra easy option, call AT&T and tell them the modem doesn't power on. Make sure to unplug the modem before you call, because they'll run checks and see it's actually up during your call. (ETA: once you get the service visit scheduled, or they agree to ship the equipment, plug it back in.) Once the tech gets there, you can tell him the truth, and he should just swap it out.
