PLEASE Help! Internet speeds...

I hope this doesn't wind up being too long, but I am about to lose my mind here. I have Optimum internet service. I was originally on the 200Mbps plan long ago, at one point the upgraded me to 300 for free. That was all fine and dandy. Last week I get an email that they had now upgraded me to 1Gbps for free. My speeds went from being a bit over 300 like they were supposed to be to around 120.
My modem was a DOCSIS 3.0 and both it and my router were a little old, and 2 of the WiFi antennas on my router had broken off from falling, so I figured I'll just buy brand new shite anyway. I got an Arris Surfboard 8200 and an ASUS AX58U. I called to get the modem MAC registered with them but it would not connect at all, so they send a tech out and he can't get it to either. He ends up hooking up one of their brand new modem/router combos (which I hate) an Altice UBC1340 and gets it registered.
While he was here I did a speedtest both on my phone and my hardwired desktop and both went over 600Mbps, at this point I had already spent so much time over a few days with different support and then the tech I just said fuggit that works for me. Later that evening I did some more speedtests and nothing over 200 again or since.
I have tried using it with the new router I bought, new Cat6 & Cat6E cables, new co-ax cable, hooking it up in every way I could. Nothing. Support did a speedtest to the modem and it was 1Gbps+. I also used their app to test to the modem and got 1.06Gbps. Wtf could be stopping it from getting to any device whether wired or WiFi? And whether I use the built in router or my own. Even wired straight to the modem not using a router at all. I am bewildered (I love that word.)
Please and thank you to anyone willing to help. Optimum damn sure isn't.

Start simple with only a computer hard wired to the modem.

When I swapped my Cox modem for something on their list of approved modems, it made a massive difference. I've yet to have my internet drop at any point since I did the switch.
Does Optimum have a list of approved modems for your speed you have?

With just the PC hardwired, what speed test are you using? how are you accessing it (browser, app, command line)?
What speed test is the internal test using that shows 1Gbps+ speeds to the WAN side of the modem?

you said coax cable, so it's not fiber right?
do you have any other internet options in your area?
can you ask their tech support to send a new signal of some sort?
this sucks when you can't figure out why you aren't getting the speeds you use to.

I was using speed.net, but I tried googles and two others I can’t remember the name of. All in browser. The one straight to gateway was optimums built into their app.
Right now I have no other high speed option but Vexus is currently building theirs out.

Dont use a browser. Browser should work but sometimes it doesn't when you are getting to 1Gbps+ speeds.
Download the speedtest app. Search for an Optimum testing server located near you. You want to find a server path that never leaves Optimum's network to rule out peering issues.
and then be sure to try multiple ethernet cables between your PC and the gateway. Bad cables can cause all sorts of gremlins.

Ive tried at least 3 ethernet cables in every possible combination to and from modem-router, modem-pc etc. And three coax cables (my original, one i bought brand new when i got the modem, and the one the tech provided which was also brand new.) Hopefully when the tech comes tomorrow they can figure something out, if not I have no idea what I'm gonna do.

I know nothing about the Altice equipment...that said.
Is there a place on the Altice that displays the cable / ethernet stats ? Like CRC's and signal level etc.
Maybe a clue there ? Then again I would hope the cable techs would have looked at this before anything.

I've looked online everywhere and I can't find how you can see a damn thing with it as far as settings etc. I hate it. If I were to use it as a router also you can't even split the bands. I got them to put it in bridge mode so I can at least have my own router settings.

Why are you using a router? You said you were directly connecting PC to gateway. Get the router out until you find the problem. It could be qos settings or something in the router causing the problems.

Bridge mode eliminates the router capabilities of the gateway. I said I have tried connecting PC directly to gateway via ethernet. The standalone router wasn't even plugged into power or occupying a port. But even if everything was working, I would still use my own router. Believe me, I have tried connecting everything in every manner possible with multiple different cables, configs, etc.

I get what bridge mode and everything is but if you are serious about finding the source then you have to start simple and eliminate all variables in your control.
One Ethernet cable proven to work at the speeds from your PC to the gateway. Nothing else. You are just wasting your own time. Use the windows speed test app with an optimum server.
Posting a screenshot of the internal tests showing full speeds might also be helpful if it has server info on it.

I honestly don't know how else to say it man. I really appreciate you trying to help so please don't think I am being rude in any way.. I HAVE tried NOTHING but the modem connected to the coax, with a single ethernet from the modem to my PC. The router was never in the picture. Multiple times.
