How does that typically work? Do the office screens go blank or mirror what I’m doing? Wondering if someone say at my desk could they essentially watch me work

If you remote desktop then yes the people at the machine can see. But typically when you connect via VPN it just gives you access to resources at work as if the computer you are using were there, so you aren't controlling another computer.

Ask someone you trust to turn your monitors off.

So if I’m using VPN they can’t sit at my desk and watch me work?

When you work from home, do you see the screen/icons/etc that are on your computer at work?

I see everything exactly like my desktop is setup. It’s like my desktop is on my laptop

Does it? Sorry, I've been off Windows for 15 years. So it's a true remote login and not a screen share?

Can IT still snoop?

RDP: No
LogMein, TeamViewer or the like: Yes ( but those normally have a button to "black" or "blank" the remote screen )

Remote Desktop is true remote login, remote assistance is a screen share.
