I wanna update tonight. What steps did you follow to do it? Do I need to find a custom ROM?
Or, could I do this:
- Backup with Titanium
- Factory Reset
- Update
- Use Wug to re-unlock,root, and decrypt
- Restore from Titanium?

Find a rom first, I recommend you use Rastapop right now.
So DL the zip from xda.
Backup
Boot to recovery
Flash rom
Flash Gapps pick which gapps package you want here and download
Wipe caches
Reboot
You don't have to do a factory reset/wipe if it's your first ROM.
Only when coming from a different ROM do you have to wipe everything.
So all you need to do is download the zip and gapps and flash it in recovery, wipe caches when done, reboot.

So it's already using 5.0.1?

Correct, roms have been using it since it came out last week.
Also see my edit about Gapps forgot Rastapop doesn't have them built in.
Gapps stands for Google Apps. They aren't included in most ROMs and always have to be flashed after rom.

Titanium backup is confusing at first look... do I have to backup each app individually?

No hit the checkmark top right next to menu. You'll see all the options.

Got it. So I should be backing up Apps + User Data?
EDIT:
From that Google apps link... Does this mean I'd have to always update google apps manually?

All apps + system data yes.
Even though you won't be using it since you won't be factory resetting for your first ROM.
You only need to wipe the caches after flashing the ROM from stock.
ETA no they update from the PlayStore like normal after being flashed. They update the ones in the flashable zip manually each week.

Download links "coming soon" for google stock package. I suppose I could just go to the play store and install them all manually.

Flash the micro package that has download links and then just restore the other ones you want from your backup.

So before I flash this ROM, I suppose I should ask what is different about it vs. stock. All it says is "What is Rastapop? The way I want Android." I'm assuming explanations aren't posted because most are already familiar with it, but I have no clue.

It's based off CyanogenMod, and quite a few of his changes are in the changelogs.
The G+ community is the best place to read what the dev is saying and others about features and future updates etc.

/titaniumbackup...only titanium backup can read the files to reinstall them anyways, can't do it manually within the filesystem you have to use titanium.
Did you already flash it all?

No, but I want to put a copy on my PC... Won't flashing this ROM wipe the backup from my phone? I'm trying to google where it is, and I'm just reading "On your SD card." That's helpful.

No, that's the whole point of the backup, it stores it in a location that will not be wiped, I only put it on my PC to be extra safe especially on a newer OS like Lollipop. Plus you aren't wiping your phone for this ROM since you aren't coming from a different rom, you aren't going to lose anything since you aren't doing a factory reset.
But the folder is just /titaniumbackup, drag and drop that onto your PC.
/storage/emulated/0/titaniumbackup

EDIT: found folder location settings in preferences. This app wins the award for worst user interface ever.

Yeah you done fricked up.
It should take quite awhile to back everything up, 10 minutes maybe more or a bit less idk how many apps you have.
My folder is 1.34GB.

It did take a little while. It's showing everything is in the folder. I just can't see anything but that 4kb file when browsing it on my PC.
Having this problem: LINK
In File manager on my phone, i can see all of my backed up apps in the folder. Just cant see it on my computer.
