Looking for surveillance camera advice

My mother is currently living in an independent senior home. Over the past year she has complained that someone is stealing from her. Quite a few times, I have taken her to the bank and cashed checks for her and within a few days she has no idea where the money is. This last time, it was $350 in cash that was missing in short order.
I think someone is stealing her cash, I have a good idea who might be the culprit and would like to catch them.
I would like to set up a security camera of some sort to monitor her apartment for anyone that may be entering it when she is not there. Any ideas on how I can do this without an internet connection or wifi?
Any help is greatly appreciated.

No internet= my go to
Motion activated game camera type system.
Pluses:
1) time/date stamp
2) find one that sends pics via mobile data in real time.
3) with # 2 you bust the POS for stealing the camera too = felony in every state I'm familiar with theft statutes
Phuq a thief.

How long do you need to record for?
Thiswill record on sd card for 24 hours
That looks good, but the 24 hours of taping may be to brief.
Is this one motion activated so that it only records when there is activity and thereby extends the recording time.

Any particular product in mind?
I bet she has had money stolen regularly for the last 6 months and I would really like to catch the bastard. The admin at the center has been of no help at all.

I have one that looks like a smoke detector and is motion activated. Tag that thief.

If you have ever have never had to review camera footage, make sure you get something that is very clear and make sure you can see the money disappear and can identify the person in the video. You might need to practice the action to make sure the camera is capturing what you need it to capture...

good advice and a little role play may be fun.
I think just proving someone entered her apartment without permission will be enough to get the administration at her senior center to take notice and do something about it.

If you want it to record longer than 24 hours without a pc or internet you are going to almost have to go with something like this.
I have their 8 camera 700 tvl system at the house and the picture day or night is fantastic. If you go with a lower resolution you may not be able to id the person. Get this and order a couple 700 tvl cameras that are either concealed or easily hidden. If you want to see at night make sure the camera has IR sensors. It also has a nice app to view from your phone if you have internet.

Take this situation to the administration and they will set up camera surveillance with your permission.
I use to work in admin in a senior home.

Interesting. About 6 months ago, my mom had some fairly expensive perfume stolen from her room. My wife went and spoke to the manager and a few days later they bought her two bottles of perfume to replace the ones that had been stolen.
I was surprised at the time of this nice gesture, but now I think that maybe they were just covering up for a staff member. I bet they reviewed the security cameras and knew a staff member was responsible.
Thanks for the heads up about the security cameras.

Get a small safe that will fit on counter top or even inside of a slide out drawer. Use strap band and screw it down. Can place your mothers money and any other small items in it. Give the combination to the safe to the administrator only. Outside of you or a close family member having the combination for access, the administrator is the only one who can access for your mother in abscense of close family. Require the administrator share the combination with no one without your conscent. Do not give the combo too mom, older folks sometimes put trust in those they shouldn't.

Thanks for advice. I just bought her a lock box and only my mother and me have the key. At this point, I don't trust the admin.
