Data plan usage question

I'm looking to switch from my ISP to a complete cellular service solution, eventually being able to take this solution with us when we RV for 1-2 monhts at a time. The most affordable option is $84.95 for 400GB/month on AT&T and I'm trying to figure out if this will be enough. While we are using it at home, we currently use Hulu as our TV provider, we both work from home, and the usual streaming occasionally of Netflix. Do you think 400GB will be enough? I've emailed my ISP to see if they can provide me with monthly usage stats, but nothing so far.

I would be shocked if you are watching 4k/HD streams for multiple hours per day and keep it below 1.5 to 2.0 T.
I think 1T would be THE minimum, and even then it could get dicey.
Just my $0.02 and probably not worth that.

I am using 1.1 TB per month using Netflix, Prime and Youtube.

I just found an note on my ISP's website that says they deem anything more than 250GB/month "excessive" and they can take action. Not sure if that means they would throttle or shut us off completely, but I've never had them contact me regarding us exceeding that amount.

Stream most of the little bit of TV we watch on a Roku and stream to our Sonos speakers.
