Auto-Populate Multiple Documents Help

Lets say I have five different types of documents that I want to fill out with the same information (client name, address, date, etc.)... What would be the easiest way to have it populate all "documents" at the same time?

What document types? Is one a PDF, another a database, a Word document, then an excel document?

Or are they all a Microsoft Office document or PDF?

But seriously...

They are letters of observation to be stamped by a PE. Each letter is for a different observation. The body of the letters do not typically change except the address, date, client, etc.

To this point, I've been copying each "type of observation" letter and changing it manually in word and then printing to PDF. If I could have a template for each type of observation and have it auto-populate and able to print into separate files, that'd be great. Minimize work and the chance of typing something wrong.
