Anyone here using a dual sim phone?

I still carry a work phone and a personal phone. I saw someone using a dual sim iPhone yesterday it got me thinking about combining my phones. But I have some questions I’m hoping you guys might be able to answer.
Do I choose which line to use for each call/text that goes out?
Is the data always going to come from the primary sim ?
Any downsides?
I have an iPhone and Samsung. I only like the iPhone bc of iMessage, CarPlay, and FaceTiming family. Neither of my phones are dual sim compatible so any suggestions on another phone is welcome. I’m likely to stick with the iPhone but I’m certainly not opposed to other options. Tia

Sorry to hijack, but that Youtube video posted above sold me too, but I have a related problem now: Recently switched to AT&T to take advantage of BOGO iphone XR, partially for ability to use dual SIM on a long international SIM coming up. However, after switching I now see that I have to have the plan for 60 days to unlock my phones. It looks like paying the installment off early will likely eliminate my billing credits on the phone. I think I'm resigned to just bringing an old phone to use with international SIM since the dual SIM option won't work, does anyone have another solution to unlock my phone or can I use the dual SIM on a locked AT&T phone?

I’m honestly still a little lost on the subject. Will be moving to Eastern Europe in a couple of months and have been thinking about the dual SIM issue.
I just want to be able to use my phone as normally as possible over there while on the European SIM, and just switch it to the US SIM when I’m stateside (will stay on my family plan here); just get off the plane, select the SIM and that be it. Is that possible with the iPhone’s eSIM, or do I need to just switch the SIM out?
ETA - Need to update my phone as well, so I’ve been looking at either the iPhone Xs or the Galaxy S10, any thoughts on which one will work best over there? And does the Galaxy ecosystem have all the same apps as the apple store (I’ve been with apple for a couple of generations now and had a Windows phone before that)?
Any advice is much appreciated.

I have a one plus and you setup defaults but every call and text had a SIM card and number if you wanted to flip

I have personal and work phones and it's seems so dumb when this tech is out there. But as usual US companies are greedy AF. I went to TMO yesterday and knowing the S10 and Note 10 have dual SIM capabilities I asked and TMO doesn't have that feature.
They do, of course, offer a $10/month plan that gives you similar features that I would need. I don't want to pay $10/month forever I just want a phone that can use 2 SIMS and go on about my business.
Anyone know what carrier I should look at? Or is it not about the carries, it's only the phone that matters and if I get something like a OnePlus it will work with TMO? Or do I need to switch to Fi as an example?
