This may be a dumb question but why does it seem that for the last month or two all of Leicester's games have been on Sunday and Spurs have been playing on Monday?

they are being moved for TV. In the UK it's illegal to televise the 3pm Saturday games (9am here) in order to protect the attendance of the lower division teams. As a result BT and Sky move the teams in the title chase to other time slots.
