Can someone explain formations to me

I’ve been a casual follower of USMNT for years but I’ve never played soccer, it literally didn’t even exist where I grew up. However, we’ve come a long way and now my kids play and the high school they will attend has a boys and girls team. I get that there are defenders, midfielders and strikers, but when I watch a game I don’t get what the formations mean at all. Everyone seems to be all over the field at any given time.

The formation you start in typically will change based on
1. When you're in attack
2. When you're in defense
3. The oppositional positioning
I can send you some basic videos from youtube about this if you'd like. They have visuals to explain how teams shift.

I see people debating whether we should’ve been in a 3-5-2 or a 4-2-3-1. Once the game starts does that really matter? It seems no one stays in that order anyway

It matters because the formation determines your responsibility on the pitch. It is no different than football plays where everyone has a specific assignment. The formation allows players to trust where they are going to be in relation to each other on the pitch.
