I consider even court-ordered gerrymandering to be pathetic pandering which creates more problems than it fixes. But you make a good point so I instead offer up California's 38th District created specifically to make a Hispanic district.
As was Illinois' 4th District:
Or we can just look at Maryland's 3rd, which was solely to create any Democrat representation, and be in awe:
