So what happens? Ebay sends you a 1099 at tax time? Throw it in the trash. Who the hell is going to know the difference.

Sales tax is a bit high but it's kinda how you squeeze a balloon. Most of those lower (but not by much) sales tax states have much, much higher property taxes.
The average home ownership in the USA is 5 years, in Louisiana is it is 15 years.

I don't disagree. But that doesn't excuse a blatant money grab under the guise of sales taxes.
Sales taxes are paid for services provided by a municipality or state. Internet sales taxes are charged, with no accompanying services rendered.

No what happens is EBAY collects it upfront when you purchase the item and they donate it to the government on your behalf. Otherwise I would do exactly as you describe.

I've sold a few things this month and the taxes are coming to me.
