Good waitstaff is more important than the chief for making a dinners experience great, and for making the owners business profitable!
How you ask?
1 They are the face of the restaurant. They make dinners welcome and comfortable. They steer customers to dishes and drinks they will enjoy and are profitable for the business. They fix all mistakes the employees make. Their personality and efficiency combined with the quality of the food determines the value of the experience and if you will become a patron or one and done!
2 They are the customers advocate. Is that glass dirty? Get another. Is that over or under cooked? Fix it! This is taking to long? They hurry the process and mollify the customer. And they do all of this for multiple customers in that hour!
What is a job worth? What ever someone is willing to pay for it! That's why athletes are paid millions to play a game you could see for free at your local playground?
Get an economic clue!

Maybe it's an economic thing and not a race thing.
