A/c isn't a great idea for a shop that size unless you make a special man room.
Musts= sink, tons of ac outlets, inside & outside garden hose connections, loft for storage, fridge, & freezer.
Potential ideas: Internet. Generator setup to run your house/ shop. (I assume you'll live there for a while.)
Consider the slab and any access tie ins (sidewalks/driveways). I didn't want my pavement to be flush with the slab, but I wasn't there when they poured it.
Sure enough, they made a nice pretty transition for me. Now I've got a spot in my leanto area that won't drain rain water.

wood burning stove vented outside obviously with an acess door to a through wall wood stack.
wader rack
elevated pad minimum 6 inches with imbedded concrete bolts for the safe (hell of a lot easier to do now then drill and tap them in later and the elevation will keep it dry if it floods)
electical power running around the entire building at 3ft and at 6 ft with multiple outlets (assuming a metal building, crooks will just cut a door in the side of the building with a battery powered saw. when they hit an unecpected 110 wire it stops their entry)
stainless steel fish/game cleaning station with running hot and cold water double sink and GFI power source hanging from above on a slightly off level broom brushed concrete pad to stand on. you can get these by auction pretty cheap

insulated walls, door and ceiling,
sky lights (barred)

Hell got to find some property to buy first.
As far as trouble finding the time I know what ya mean. I havent even been bass fishing yet this year and I havent seen the lease in 2 weeks. Im starting to get a little jumpy.

Im going to the green geens property this weekend to get my stands out and im bringing them to macon the week after. We have a lot of work to do but im just excited to get to the woods.

Water faucets inside and out.
Chain or electric hoist from ceiling (great for lifting anything from a deer to an outboard)
sky lights
drop lights or movable work lights.
Large ridge vents with attic / vent fan
Make the shop as big as the slab, add lean toos as needed and you can get by with gravel under them.
Vertical storage, anything than can go on a shelf / hang on a wall saves your precious floor space.
