Any recs for a processor in Baton Rouge that would help us make use of some old ducks?

Benoit’s across the river has done a great smoked duck sausage for me.

It’s been years since I have had some made but this is who did mine. It was good.

I had some cheddar duck sausage given to me one time. I wasn't expecting much, but damn it goes good together.
