Way I do is it spread some cream cheese on it put some slices of jalapenos on, fold in half, wrap in bacon, bake @300 for 30-45 minutes.

ETA I realize that this is nothing special and that just about everyone does it but it's easy and tasty.

Yall pick/pluck them yourselves? Any advice on doing this efficently? Ever use one of those plucker drill attachments sold at Cabelas and BPS?

If the ducks aren't too shot up, and are puddlers we pick em. Divers we usually breast out, really don't kill too many of them. Mallards, teal, and woodrows are definetly picked. Sometimes pintails and greys have those young pin feathers, it would take an hour to clean just one.

We have a chicken plucker at the camp and it's the cats meow for picking ducks. I think it's better than wax or anything else I've seen. The idea is the same as the drill mounted pluckers so I would think it would work also if it's got enough HP.

We do pick them ourselves sometimes, but we also have a few guys who pick them for $1.00 a bird plucked, gutted, and in bags. I have never used the drill attachement, but the homemade ones we use work real well as long as the birds are dry.

I work for a poultry processing supplier and we build and sell picking equipment to all the major poultry processors.

Those rubber picking fingers can whip the feathers off a bird.

I just did this crappy looking sketch on paint, but you should be able to get the idea.

Do you prep the ducks in anyway for plucking? Dip them in hot water? Are you saying that surgical tubing will work for the pluckng fingers? Any idea waht the RPM is on that plucking motor?

It almost killed a pretty tough group.
