Nilgai Processing

Killed a nice Nilgai bull this weekend in South Texas, not sure of the weight, but 4 guys weren't able to load it in the truck so we had to field dress it.

Took it to Hiblers in Kingsville for processing. what are your favorite ways to have Nilgai processed? going to get a little jerky, but not much since its too expensive.

will work on getting a picture.

Some of the best game animal meat you will find, seriously, it's up there with Elk/Axis. I've never killed one but have been given lots of meat, steaks, burger meat, chili grind, roasts, all of it was great. The burgers weren't even cut with pork or anything.

IMO, you're wasting excellent table fare if you have jerky made ..... same analogy as buying a filet mignon and dehydrating it into beef jerky

Nilgai antelope is very lean with the consistency of veal. Go with steaks, roasts, and ground meat. Smoked sausage would be another option. With the roasts you can cut it into medallions and cook medium rare topped with a peppercorn cream sauce.

If you have enough leg left, it makes an incredible osso bucco (ask butcher to cut for you)
