Yes. I rode caliper brakes for a long time.
As I said above, Disc brakes stop better in the wet, and they hydraulic version are easier on you hands (you don't fatigue as much), but they are not a necessity.

I took the rims to a local shop and they said that my current rim is fine for 26" mountain bike tires. They ordered me a couple.
The rims seemed too narrow to me for mountain bike tires but what do I know?

Welp, got the new tires and they seem pretty good. It looks like I'm stuck with caliper brakes and that's ok for now. I may see if I can get an upgraded fork with shocks, but that's about it for this one. I think if I ever get serious into mountain biking, I'll just buy a used one like many have suggested here.
