Any Lafayette deer processor’s y’all can recommend? Last year I had MC’s taxidermy in Carencro do mine. They did a great job, but curious if there may be some local favorites?

Few friends use Southern with good results. I use Adrian’s supermarket and like them, they just don’t smoke anything. Other side the family uses Lagneauxs but they’re not deboning this year.

He does a fantastic job, but yes you will feel it on your wallet. I brought a 9pt to get shoulder mounted last year along with the meat to be processed. I got back 80 lbs ground, 20 lbs fresh sausage, some of his smoked sticks and the steaks. That and the mount together was about $1500 total..

Is Adrian's deboning again? Adrian's has been my go to for over a decade mostly b/c of pricing, but someone told me they weren't deboning last year so I ended up processing myself.

This. I have used many places and Andre at Southern is the best hands down.

my usual is ground meat/ribeye fat 90/10
50/50 fresh and smoked sausage. also smoked jalapeno and cheese sausage.

It's been a while for me. They lose your deer or something?
