Jambalaya Help

I made a promise to cook jambalaya for a big group and realized I only had my crawfish pots around. Has anyone ever attempted this before?
How unlikely am I to succeed in cooking a good pot of jambalaya?
I figured with all the coonasses on this board, someone is bound to have attempted this before. TIA

Very easy to help you, go to the following link and download the jambalaya calculator and follow it to almost exactly and it makes a very good and very flavorful pot of jambalaya no matter the amount you are cooking. It really is great!!!

ETA: I didn't read your post carefully and missed the part about crawfish pots. I am going to say it will be very difficult to cook a large batch of Jambalaya in an aluminum crawfish pot. The heat will not act right and you will have terrible hot spots in the bottom. IMHO, there is nothing worse than a burnt tasting Jambalya. I bet if you ask around you can find a cast iron pot to borrow or have the owner of the pot help for an invite to the party and lots of free beer LOL

You need to find a 5-10 gallon black iron round bottom pot
It will burn like a mofo in a aluminum pot

I’ve done this several times for groups of 4-500. I brown all of the meat In batches in my cast iron pot, including onions/etc. I then used my 120 qt aluminum pot when it comes time for the liquid.
Tips - put the browned meat into the big pot before pouring in your liquid (Lots of splash). Heat the liquid first in another pot to reduce boiling time. The pot will be heavy as shite - set it up where you will serve it need be. Even with low heat the bottom will burn. Don’t scrape the bottom - you’re gonna have to sacrifice that part. Lastly, that amount of rice will retai n lots of moisture. RemovIng the lid towards the end and stir to help it dry out if it’s too wet. It’ll dry up and get right quickly with the lid off and stir.

So I've actually done it in a crawfish pot for a tailgate twice. It is tedious. You'll need to brown meat, remove it, repeat. Cook down the onions and all very slowly, stirring a lot. When you cover the pot, use a bungee chord to ensure a better seal.

Cast iron works best for me. However I do cook large batches (40+ servings) in a big electric roaster. Have done this for years for baseball tournaments or church camps. You will burn it in a crawfish pot.

No news imo is bad news for the jambalaya. I really hope it came out ok. Jambalaya is one of those things that one little frick up can ruin the entire pot. And rice burnt to the bottom of a aluminum pot, not good either
