Is there a device to help de-shell and de-vein Crawfish tails?

Wanting something like the shrimp de-veiner to help with crawfish and keep the fat portion on. Did 6 platters of cold leftover crawfish yesterday and the ends of my thumbs look like they went thru a meat grinder this morning.

Like to keep as much of the yellow fat as I can for Etouffee and bisque.

I remove the tail fin meat on shrimp. We fried shrimp one night and my wifes friend was breaking the tails off. She didn't realize It was just meat because they look like the ones you get in a restaurant with the tail fin still attached.

Dingbat friend of mine bought some kinda crazy crawfish shell remover device once,worked off co2. She took it to restaraunt without trying it at home,she was blowing crawfish parts,juice all over people at tables surrounding her.Her boyfriend was quite embarrassed,bunch pissed off people,manager was not amused either.

There are over 25 patents on automated crawfish peeling machines, and some of them actually work pretty good. Laitram Machinery, Harahan, Louisiana, and one of the world’s largest manufacturers of shrimp processing and grading equipment, developed a prototype automated crawfish peeler over a couple decades ago that worked pretty good.

Bottom line, from a business standpoint, Laitram determined it was not worth pursuing, with the market limited to just Louisiana, plus if I recall they determined fewer than a dozen machines would be capable of handling the entire crawfish peeling industry at that time. Plus there are some inherent engineering problems with mechanically peeling crawfish that doesn’t seem to be an issue with peeling shrimp so there were still engineering kinks to be worked out with mechanized peeling.

As long as H-1B visas are plentiful enough to bring in Latin America labor to peel crawfish by hand in Louisiana’s crawfish processing plants, it not likely we’ll see mechanized peeling of crawfish anytime soon.
