I just need to understand if they can hold my weight up there.
Smaller ones will, larger ones may or may not. Small round ones are cheap and pretty tough. If you break it stepping on it just replace it.
I have done similar repairs with a 2 gang cut in electrical box, jiffy or e-clips and a 2 gang blank cover. That was not on nice boats but it is basically the same principle. Cheap blank covers are pretty flexible until the sun gets them, about 3 or 4 years. They are lower profile but hard to make water tight.

Go with the Armstrong plate and use thinned epoxy to seal all penetrations. Multiple coats.

Yeah I'm going with a 4". I guess I'll make a video showing the progress.
Now that I did all the epoxy layers on the original repair tries I also gotta clean all of that.
I've fixed and changed so many things I don't think you can say this is the same boat I purchased in 2021.

Thanks everyone who suggested the threaded hatch cover. The manufacturer suggest this one here:
I really didn't need to be worried about the structural side of this, after cutting the hole in the deck I learned the fiberglass is about 1.5" thick. Wish I would've known, I would've gone with a different hatch and had a lot of new storage.
This gave me access to the back of the hull where I found the nut that came off and was able to unscrew the other nut by hand. The manufacturer said it was sealed with 5200 and there's absolutely no way they had that on there but no worries, it's fixed now.
Here it is before I repair the gelcoat. Nice and secure.
