Fishing in Destin, FL

I'm headed down to Destin, Fl tomorrow and wanted to get some advice. Where can I fish without going off the pier? Anyone done anything off the beach lately? What were you using and what time of day? Any baits I need to be sure and bring with me? What were you catching? How strict are they with licenses?

If you are by yourself - or, at least willing to go fishing without the kids: go to the jetty. Long walk over the rocks + live shrimp = big reds. I've seen someone hook and almost land a 3 foot sailfish off the jetty. Also plenty of sharks. Mostly though, there are a ton of big arse redfish right off of the jetty.

What size redfish are we talking? Could I land them on trout tackle without a 45 minute fight?
