First time cooking whole doves.

Was going to try Hank Shaw’s Dove La Mancha which some of yall recommended but when I read that recipe I saw Hank had another low and slow one that he said was more tender than La Mancha. Season, sear then smoke or indirect grill on 200-250 for an hour or more. I cooked mine to 140 degrees internal temp and that was about right.

Trying to decide what to do with ours. What did you marinade/brush them with before or after searing?

Little hammers are pretty proud of their doves and wanting to help work on them for dinner trying to give them options on how to do it

I have to give a big thumbs up for cooking the whole animal that was harvested.

I coated them with olive oil inside and out, then dry seasonings then briefly seared them on both sides. Then put them back in a big bowl and coated them with Stubbs Sweet Heat and back on the grill.
