First Attempt at Venison Link Sausage

Spent about 8 hours yesterday deboning, grinding and stuffing sausage on my first attempt to make some. Bought a grinder attachment for my wife's kitchenaid and it did great for grinding.
15 lbs of regular farm style put on traeger at 180 til internal of 155 and then gave it an ice bath to stop cooking.
Turned out awesome for texture and taste.
Jalapeño and cheese is still on the smoker.

I've thought of doing the same thing. In fact, I also just bought a Kitchenaid attachment. Thought I'd try that before spending more on a dedicated unit. Sounds like you were pleased w/ the attachment. Any other suggestions using the attachment? Thx.

Nice job on the links and great color. You need to position the links so they don't touch. That way the smoke and color will be uniform. Try to rig something so you can hang the links.

We geinded up a bunch last weekend at my cousins and that kitchenaid attachment did just as well or better than regular grinders they bought off amazon

Just make sure not to put grinder attachment in dishwasher as it will strip off the coating. Ask me how I know. Lol

Might have to try that. I have a tailgater so it might have something to do with the thin metal it’s made from.
