I’m not a fan of electric knives so I picked up a 9” Buck fillet knife and I absolutely love it. I’ve used it for about 50 fish now and it holds a blade pretty well. It’s been used on 50/50 reds and specs. They’re on par with a bubba blade when it comes to price, but they have the name and warranty behind it. We’ll see what they say when I send it back for the free sharpening.
The weight and balance of them is very nice.

Fillet knife brand doesn’t matter just that it is very sharp. I use a Lansky 5 stone system to sharpen knives. Razor sharp. Takes a few minutes to sharpen a knife so I have 3 knives ready to go. If speed is your goal , go electric but if you want pretty fillets and not a lot of wasted fish meat get a Lansky sharpener.

All day erryday IMO
Last timed it was 15 seconds per fish but they were hard. I may fubar 2/30 using electrical and mostly if I don’t straighten them.

For trout, the belly method is by far the most efficient. See video for comparison.

I made the switch to the belly method, quicker and the fillets are about the same meat wise.

Getting the Bellie out is first on the list.
