Worcestershire/Soy sauce marinade for a couple of days. Then a little granulated garlic powder, cayenne pepper, S&P, and ancho chili powder. Dehydrate. It never lasts long.

I cut up an eye of round in 1/4 inch thick pieces across the grain after trimming off any "white skin" that may be on the meat.

I'll then put it all in a large stainless steel bowl and add the following:

Worcestershire Sauce
Soy sauce
Slap Ya Mama or any other Cajun seasoning of choice
Black Pepper
Cayenne Pepper
Cumin
Chili Powder
Smoked Paprika
Garlic Powder

I make sure the meat is seasoned evenly by working in the seasoning by hand with tossing the meat until it is all evenly coated.

Then I cover the bowl and place it in the fridge to soak overnight and mix it a couple times during that time.

Next day I smoke it till done to my liking.

You could ask 100 people this and get 100 answers, and might be able to tell the difference in 20 or so of them.

Marinade overnight in a seasoning you like that has salt, garlic, and a little acidity. Everything else is window dressing and personal preference.

Low and slow with air moving over it or dehydrator. My best results by far have been in a gas oven with the door cracked.

I’m thinking about getting a commercial grade dehydrator for this deer season.

I use cabela's original jerky seasoning and 2 tablespoonfuls of Walton's Tex-Mex seasoning and smoke 5lbs at a time. Been a favorite for any that have tried.
