duck breast smell sour, what up wit dat

So ive been brining some duck breasts from yesterday and today in separate bags. After draining the bloody water from the yesterday breasts I noticed they smelled very sour, like spoiled milk. i just recovered them with brine and didnt worry about it. Drained again just now and they smell like a big bag of mashed up assholes (more sour)
are they bad? they were cleaned 2 hours after last bird was shot, and I even put them on ice for the hour ride home because of the heat outside.

I've kept ducks on ice for days without any problem
. I definitely wouldn't eat them if they smelled sour though

What'd you brine in? Was there a spoon in there? I had one earlier in the year, last bird shot all teal except it......it was rotten, inedible I tell you

Hmm...wrap um in bacon with cream cheese and you'll be fine.
I wouldn't eat them if they smelled that bad.

yep i had 1 spoony in each bag, now the bag of birds from today is sour smelling too. I usually soak them in some tonys and water in freezer and just store them like that and never had a smell issues.
Brine was the following:
metric shite ton of salt
few spoonfuls of brown sugar
covered with water in gallon ziploc bag.
oh well, i was making some duck sausage, now its just gonna be pork sausage

I really have no idea what would make it smell bad...I damn sure wouldn't eat it, though...
