But could you get your grandfather to influence your dad?

I would say the only reason you are still letting him hunt is because he is a preacher. I say screw that and tell him this is his last year because of the reasons you listed above. If he is running an atv by me while I am on the stand on MY property that would have been it for me letting him hunt...
Now I am the type who will protect my hunting land. I try not to be a pr!ck about it but sometimes people don't listen unless you get direct. I will walk my property lines and make sure nobody is hunting on our fence line if so I will let them know about it. Most to the time just asking and being polite is good enough sometimes it isn't.
People will take advantage of you if you let them.

No, I hunt on 200 acres and have had issues with people putting their deer stands on our fences. This is dangerous since I do not know when they are hunting and with us hunting and my PIL working his cows this is something I can't let happen. I do not do that to their land I do not expect them to do it to mine plus it is illegal in W. Feliciana.
Again, I am not trying to act like a BA but I just get tired of people trying to take advantage of the situation.

Probably, but my grandfather is 82 years old and I wouldn't feel right if a got him in the middle of a spat.

Its obvious the guy is coming in when you are there in an attempt to spook deer and keep you from killing them so that he can hunt them during the week.
If he has hunted it all these years, the opportunity to hunt has more than paid for any improvements he has made etc.
Personally regardless of whether he is the preacher or my grandfather gave him permission, if my grandfather had passed away I would let him know that he is no longer welcome to hunt there for free. If he wants to continue hunting you can lease it to him. Otherwise this is his last year to hunt it.
That being said he will continue to hunt it when he knows you aren't gonna be there.
There is nothing wrong with evicting him at this point.

My grandfather is still very much alive and lives right in front of the property.

Approach it this way. Tell the preacher that you want to make sure everything is done above board, and that you need to update the written permission he received from your grandfather since the property is now your fathers. Lay out the details that relate to ingress and egress from the property, i.e. when and where he can cross using a motorized vehicle.
As for adverse possession, he hasn't met the necessary elements to make a claim.

The entire area is hunted way too much, but people always kill some decent 8's. Not bad for NE Alabama.

Then that is where it should end as much as you dislike it.

Spend a few saturday mornings squirrel hunting. He'll get the idea.

Communication goes a long way in these type of issues. Talk to the guy, and tell him your thoughts. If he gets offended, than he's the a-hole not you. Tell him when you hunt and ask if he can hunt during the week, etc.

I agree, however, he SHOULD know better. I would like to think that if the roles were reversed I would get the hint.

If your dad owns the property and you dont like the guy hunting but he does your only option is to either accept it or make the preachers hunting experiences unpleasurable.
The second is a thin line that could drive a wedge between you and and your dad.

Dad doesn't like him hunting either but just hates to ask him to leave after all the years and stands... Fwiw if he had ridden through while dad was hunting he would be livid

It should always be ok to have a conversation with someone.

Let dad know about the massive buck you saw right near preahers stand but didnt get a chance too shoot and that unfortunately you will not be able to hunt at all this coming weekend.
Let preacher know same info and let the fun ensue.
