Deer ground meat question UPDATE : pg 3

Ok had a deer processed. Made sausage and ground meat. Sausage is great. Ground meat is 50/50. When you defrost and open the vacuum sealed bag it smells like the deer was just hung and cleaned. Now there is no seasoning just plain ground meat being used for tacos, chili’s etc. just has a dead deer smell like when I was cleaning it. Anyone ever experience this

So your ground meat smells like fresh venison? I'm not sure what the problem is.

It’s almost a rotten smell. Just made a chili and it doesn’t taste bad but you can tell it’s gamey.

Cook a batch with a pack of taco seasoning. If you can still smell it, it is bad. I usually let my mother in law graze on it first, just in case!

Nothing is wrong with it. You may have not let it bleed out long enough. I keep mine on ice for 7 days and drain at least once daily before freezing or grinding up. It’s the blood you’re smelling. It’s all good. Mix with onions chopped finely and it makes a great burger. Too dry if u leave out the onion. Good with royal cheese dip as well.

COuld be many things. You didn’t clean it good before you brought it to the butcher. Any type of gut contamination can affect the taste. Also how long did you have it before you had it processed. Deer can last about 2.5 weeks from kill to freezer before spoiling. Keeping a deer on ice won’t get rid of the gamey taste, one of the biggest myths there is.

My problem is what is the pork was bad. Or they let my meat sit too long. It took about 3 weeks to get back. I had other people get made by same guy and they claim not to have the smell I describe

Deer was killed and cleaned then packed on ice. Brought in 4 days after kill but was packed in ice the whole time. Took 3 weeks to get back

Might not be meat from your deer. Perhaps the processor mixed a bunch of meat together, ground it all then packed it up for everyone.

If it sat at meat market market for 3 weeks before you were called and told it was ready then meat is probably on verge of being bad if not frozen.

Brought to a friend who had some made around the same time frame. 100% different smells. Mine is definitely bad. He claims the pork is bad

3 weeks is a long time for meat to stay good in a ice chest esp if it’s just cold water in a cooler and not being re iced daily . You might get that time frame if it’s hung and dry but not in a ice chest.

I don’t know how long it was in the chest at the processor. I just know it was in the chest for 4 days when I dropped off. I was called 3 weeks later and the packs were vacuumed sealed and frozen. I just hope when I bring the chest back the processor agrees. But I stand by the pork being bad

I get mine 90/10, and it doesn't smell when opened. Probably did get warm.

The sausage is fine it’s just the ground meat. Also had tamales that are fine.
