Why not both? I'm always throwing cast iron griddles on the grill to make steaks, burgers, onions, mushrooms, etc

I also like to hover chicken and sausage over the griddle to keep a nice indirect heat.. and while the fat drips it turns to smoke and not a flare up

Some of the best steaks I have ever cooked have been cooked that way. My next 4 will also be that way because they are prime, and will catch on fire otherwise.

I've got a flat Lodge cast iron griddle. It works great, fills up half of my weber kettle. Do burgers and steaks like this, can even do bacon first for the burgers.
You definately don't have the real estate like cooking on 36" blackstone. you can do the bacon, onions, and burgers, just not all at once.
