They could.
Most people who take jobs like that do it for the challenge and prestige not the money.
SpaceX for example pays way below market value for most positions.

Not so fast. What type of engineer? They vary wildly......
A PetE in O&G, absolutely. ChemE/MechE in O&G/Chem, absolutely. Civil Engineers in the infrastructure world, not likely. A 10-15 Sr PM may be at $110-120k max. The Civil guys hitting $160k are likely rainmakers and a much fewer and far between with north of 15 years. They are the cool kids and/or business-minded bunch. Granted $140-160k is a base figure and would be supplemented with bonuses ranging from $25-$100k.

Btw, some astronauts would respond by saying Areonautical Engineer or pilot.

I was talking to my Father in laws neighbors at a party one time and something came up and I said "it's not rocket science". The guy told me he was actually a rocket scientist for NASA. I asked what does your wife do Brain Surgery? Come to find out she actually was a brain surgeon.

I once met a Space Shuttle Captain. The man was amazing. I have to say, I've never been more impressed.
