Prions, but unless he got a "mad cow" for the beef that won't be in there. What in beef stew wouldn't be killed by heat? Maybe the bacterial toxins wouldn't be denatured, but what else?

In this case, I would put the whole thing in the fridge immediately. As you are ready to eat, take out as much as you will eat for that sitting and bring to a boil before eating.
