Bipedal, predator-based structure is by far the most efficient and adaptable form, I would guess.
My question is, why not incorporate additional arms/hands? I know an extra hand would have been stupid-useful in many of the projects I have worked on.

You can hire people for all of those menial tasks. The issue is, for both the robot and hired help, cost. If you can't afford to hire someone to do stuff you don't want to do, you won't be able to afford a Teslabot.
