The Discovery Museum and the LV Natural History museum are both close to downtown. If you go to Red Rock (well worth a trip) they have a petting zoo and riding stables. If you go to the Damn or the Bypass Bridge walkway, they have a zip line place in Boulder City. The High Roller Ferris Wheel isn't open to the public yet and may not be until summer, though it seems like they keep changing the opening date.

You mentioned you have a car so if the kids are old enough, travel well and you have time; Grand Canyon national park is only a 4
or 5 hour drive. Zion national park is a similiar distance. Both very memorable places to older kids.
Probably too far if you're only there for a weekend.

Zion is only about 2-3 hours. Should definitely go to it if you don't want to make the much longer trip to Grand Canyon.
It's a much better place to visit than Vegas.

The Luxor was cool when my family went 12 yrs ago but we spent more time in Bryce Canyon and Zion NP in Utah

I heard the Bunny Ranch was nice.... you should check into that. Sounds like a very friendly family place

Madame Tussauds Wax Museum
Gugenheim museum
Plenty of restaurants
Lake Meade (when is a little warmer)
Having said that, Vegas is really about adults, not kids. Not too far from the Grand Canyon though.
