I need to decide on an English Lit Gen ed course. Any classes suggestions? (preferably really easy cause I'm a bio major): ENGL2024 or ENGL2025 or ENGL2027 or ENGL2029 or

All the bio majors I knew took poetry. They didn't seem to have any issue with it.

The subject of each lit class would be helpful. Also if you pick one and don't like it you can probably just switch sections.

Look don't go lightly on this decision. When you don't get into that third tier fallback foreign country medical school, you will be left with your job option of teaching. That is when that general elective becomes important.
