UPDATE:
Just took it to a mechanic. He scanned it and no codes showed up. It was driving just fine too. Weird.
He said if it was a clogged converter or fuel filter, then it should be more consistent than what it is.
Said it could be a fuel pump going bad and to just wait till it goes out if I want to know for sure.
Definitely this. Not a misfire.
could be a mass flow air sensor I guess, but wouldn't that have shown up on the scan?

If the intake tube was installed improperly, wouldn't it not be intermittent?
As in, I just started it up and it ran perfectly fine.

I am thinking more and more this had something to do with it.
It was immediately after having that done that this started happening. It happened the first day after, then the KAM was reset, then it was fine for 3 weeks until now.

Not necessarily. If only a code check was done-no. Testing would need to be done on the MAF itself and franlkly it would have to be malfunctioning during testing in order to show up.
I would want it left overnight so I could test it first thing in the a.m. A bit of an inconvenience; however, it's what's needed to properly diagnose it and avoid spending money on components that you don't need.

That's correct. If the plenum tube were loose or off it would malfunction at all times.
KAM-stands for keep alive memory and doesn't fit here.
Now, if they said they reset fuel trim values that would makes sense though would not fix this issue.
Again, communication is critical. You reitterate that this occurred directly post valve cover gasket replacement-this needs to be looked back over closely. May have nothing to do with it but bares a closer look based on owners description.

Cmon man,thought you been doing this for 30 years. You should know the sensors really don't do shite till the computer goes into closed loop.

My GFs car just had this problem a couple months ago and it turned out to be a couple of the ignition coils going out.
