Don't try to pump your own gas.

has anybody mentioned Oregon City? stayed on the Willamette in a boat house for a couple days and it was great. The drive up to Mt. Hood was incredibly pretty. went in October

Been there/done that during that time of year. It's awesome. You're going to have a great time. I would also recommend checking out Astoria if you have the time.
Are you spending any time in Portland? If so, a fun idea might be to renew your wedding vows with your wife at Voodoo Donuts (which is an actual, licensed wedding chapel and donut shop). Could make for a fun memory.

Portland to Silver Falls is about 60 miles. If he wants water falls, it's worth it.

Figured we could do the Gorge/Waterfalls and Mt Hood, and then maybe go down to Eugene
If you are set on doing a lot of driving here's what I would do.
Set one day for the gorge/hood and another for wineries.
Figure out which falls you want to see. You can see some from historic highway 30 but most you have to hike to.
Odds are you won't get a great view so I'd suggest Horsetail falls/triple falls. That's the hike I would do. You get 3 nice falls in 1 hike and it's a little over 5 miles.
After head west on 84, take exit 16 and then head to Hood.
We are having a lot of warm weather so unless we get lucky it won't look like it normally does. Unless you rent some snowshoes there isn't a whole lot to do except drink and eat. Look up at the top as you'll see climbers coming down from the summit.
If you do go to Hood drive 2 more miles east on 26 and stop at Trillium lake. There's an amazing view of Hood from there. Walk down to the lake to see it. Definitely worth the few minutes drive.
I don't much about the wineries but I have been to King Estate.
When you enter onto their property don't go straight (where customers would go) take a left and follow the delivery road (gravel). Take it around through the rows of grapes and look down the rows. You'll see more wild turkeys than you've ever seen at one time in your life.
Ask me anything and I'll do what I can to help.

OP is on a short trip. It is and could be done another day. Of course there won't be any time to relax. You've actually got more falls in the gorge but these are in a more consolidated area. Still, there's hiking to be done to see them.

Was going to mention voodoo, funny that they do that.
If OP wants to try their donuts without waiting an hour go to the other Portland spot or stop in Eugene. Both of those are typically dead.

I just moved out of Oregon after living in Portland for 28 years.
Do not stay at the mountain. It is a short enough drive from Portland that you will be fine. Multnomah falls is very nice and right off I-84 heading out to the Gorge.
I would stop off at Multnomah falls then head out to Hood River. You can look around that town for a little bit and maybe check out some wineries or breweries in the town and then head to Mt. Hood from there.
When you are in Portland you want to check out certain neighborhoods not just downtown. Division st, Alberta, Mississippi and Hawthorne are the main ones to go see.
Take your wife to Salt an Straw for Ice cream and make sure to try all the regular flavors. Dont be shy to ask for more samples, they wont care.
If you want to take her somewhere cool in the city for a drink, go to Portland City Grill and have a drink where you can overlook the city from the 30th floor. Or you can go to the Departure on top of the Nines hotel.
Another popular attraction is going to "Hubers" and ordering a spanish coffee. It is the oldest bar in Portland and its a lot of fun. I prefer the iced version.
King Estate Winery is a lot of fun. It would take you probably 2.5 hours to get there from Portland.
There is lots of fun places to visit in the area just dont settle for any chain restaurants or anything because there is so many good places to choose from.
p.s. dont go to voodoo donuts. Its not that good and you will be dissapointed. If you want a cool local donut place go to PIPS Donuts or Blue Star.

Thanks for all the info guys!! Wife would think I was crazy if I took her to Voodoo to redo vows...might just do that
I was looking at staying in Portland as our base, maybe just rent a house on VRBO.
Trillium lake looks awesome! Thanks, I dabble in photography so was hoping to get some good shots while there.
